One-Pot Savoury Chicken Rice

Ingredients:
- 4 Hazeldenes Fresh Chicken Thigh Fillets (skin off)
- 300g Basmati rice
- 450ml boiling water
- 1 chicken stock cube
- 2 tbsp rice wine
- 2 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 1 tbsp sriracha
- 2 tsp light soy sauce
- 2 tsp sesame oil
- 2 garlic cloves, grated
- 4 spring onions, finely chopped (to serve)
- Chilli oil (to serve)
- Fried egg (optional)
Method:
1. Preheat the Oven
- Set your oven to 170ºC and allow it to preheat.
2. Prepare the Rice
- Pour the basmati rice into a Dutch oven, spreading it out evenly.
3. Make the Sauce
- Dissolve the chicken stock cube in the boiling water. Then add the rice wine, oyster sauce, dark soy sauce, sriracha, light soy sauce, sesame oil, and grated garlic. Stir well to combine.
4. Mix and Assemble
- Pour the sauce mixture over the rice and stir everything together. Place the chicken thigh fillets on top of the rice.
5. Cook in the Oven
- Cover the Dutch oven with its lid and bake for 45 minutes.
6. Finish Cooking
- Remove the lid and return the dish to the oven for another 15 minutes, or until most of the liquid has been absorbed.
7. Serve and Garnish
- Top with chopped spring onions and drizzle with chilli oil. For an extra treat, serve with fried egg. Enjoy!
