Karen's roasting tips for Chicken

Tasman Fresh Whole Chicken, approx 2kg 

  • Pre-heat oven & roasting tray to 220ºC
  • Rub a little oil over the skin, season well with salt & pepper
  • Slash each thigh 3 to 4 times to allow heat to penetrate directly
  • Remove hot tray & drizzle with oil
  • Roast breast down on tray for 10 mins
  • Turn chicken over (breast up) and cook for a further 1 hr, and then tuck in!
