Greek Marinated T-bone Steak, with feta-crushed potatoes
Serves: 4. Preparation Time: 20 mins. Cooking Time: 25 mins
4 Tasman Yearling Beef T-bone steaks (without fillet)
4 cloves garlic, crushed
1/2 red onion, finely chopped
1 Tbsp. oregano leaves, finely chopped
2 tsp. ground cumin
Zest of 2 lemons, finely grated
1/4 cup Olivital extra virgin olive oil
1/2 cup marinated feta
Black Pepper and Sea Salt Flakes, to season
4 Desiree potatoes
1/4 bunch flat-leaf parsley leaves, finely chopped
1/2 cup white wine vinegar
Broccoli and Carrots to serve (optional.)
1. Mix together the oregano, cumin, garlic, zest, vinegar and oil in a large bowl. Rub steaks in garlic mixture. Cover and set aside for 20 minutes to marinate.
2. Preheat barbecue grill to high. Drain steaks, putting the excess marinade aside and then season. Cook for 5 minutes on each side for medium, or alternatively until cooked to your liking. Set aside to stand for 3 minutes.
3. Meanwhile, boil potatoes until tender. Roughly mash with skins on. Stir in feta and reserved marinade, season, and fold in the onion and parsley. Serve steaks with carrot and broccoli.
