Pork Steaks with sesame Asian slaw

Ingredients:
- 4 x 150g pork loin medallions
- 1 tabspolive oil
- 300g rainbow shredded coleslaw mix
- 1 green apple, julienned
Dressing:
- 3 tbsp sweet chilli sauce
- 2 tsp soy sauce
- 2 tsp sesame oil
- 2 tsp sesame seeds, toasted
Method:
1. Preheat a chargrill plate over high heat. Lightly brush or spray oil over the pork steaks; cook for 3 minutes on each side. Transfer to a warm plate, season, and let rest for a few minutes.
2. While the pork rests, place the coleslaw mix in a large bowl along with the snow peas and green apple. Add ¾ of the dressing and toss to coat evenly.
3. Serve the steaks on warmed plates with the coleslaw, drizzled with the remaining dressing.
Dressing:
In a small bowl, mix together sweet chili sauce, soy sauce, sesame oil, and toasted sesame seeds. Stir to combine. For added flavour, incorporate any meat juices from the cooked pork into the dressing. Enjoy!
