Karen's roasting tips for Pork

Tasman Pork Leg on the bone, approx 2kg 

  • Pre-heat oven to 250ºC
  • Score pork with a sharp knife in a zig-zag pattern across rind at 1 cm deep
  • Rub well with oil and salt
  • Roast for 40-50 mins for crisp crackle
  • Turn heat down to 180ºC & slow cook for another 2-2.5 hours
  • When done rest covered out of oven for 10 mins on a board, slice and dig in!
