Ultimate leftover roast beef sandwich

Ingredients: 
  • 4x slices leftover Tasman yearling beef roast
  • 4x tomatoes, halved lengthways
  • Pinch dried oregano
  • 1 tbsp olive oil
  • 1x ciabatta loaf (or 2 buns)
  • ½  small onion, sliced
  • 4 tsp horseradish sauce
  • 2 handfuls of rocket
Method: 
  1. Preheat the oven, 200°C, fan 180°C. Allow the beef slices to come to room temperature.
  2. Meanwhile, put the tomatoes and onion in a small oven dish and top with a pinch of salt and oregano and ½ tsp of the oil. Put in the oven along with the ciabatta
  3. Remove the bread after 5 minutes but leave the tomatoes and onion to roast for a further 5-10 minutes. Meanwhile, heat a pan over a medium heat.
  4. Cut the bread in half and then cut each half open, and place in pan until lightly charred.
  5. Spread half the horseradish over one piece of the toasted ciabatta, top with a couple of slices of beef, season with salt and pepper and then top with a handful of rocket and some roasted tomatoes and onions. Sandwich with the other piece of toasted ciabatta and repeat to make the second sandwich. Serve immediately.
