Beef Vegetable Casserole

Prep: 15 mins. Cook: 2 hours. Serves: 5

Ingredients:

1kg Tasman yearling beef diced casserole
1tbsp Olivital extra virgin olive oil

1 onion, chopped
300g frozen peas
2 carrots, sliced
5 washed, peeled and quartered brown potatoes
5 bay leaves
3 sprigs thyme
2 tbsp plain flour
2 tbsp tomato purée
2 tbsp Worcester sauce
2 beef stock cubes, crumbled


Method

1.    Heat oil in a large saucepan over medium heat. Add onions and garlic stir for 5 minutes. Cover meat in flour and add to the saucepan. Add stock, tomato purée, worcester sauce, potatoes, peas, bay leaves, thyme and carrots. Cover with lid and reduce to low heat.
2.    Cook for 2 hours or until meat is tender.
3.    Serve and enjoy
