Beef and vegetable casserole
Serves: 5 | Preparation Time: 15 mins | Cooking Time: 2 hours
- 1kg Farm88 Yearling Beef Diced Casserole Steak
- 1tbsp olive oil
- 1 onion, chopped
- 300g frozen peas
- 2 carrots, sliced
- 5 washed, peeled and quartered brown potatoes
- 5 bay leaves
- 3 sprigs thyme
- 2 tbsp plain flour
- 2 tbsp tomato purée
- 2 tbsp Worcester sauce
- 2 beef stock cubes, crumbled
- Heat oil in a large saucepan over medium heat.
- Add onions and garlic stir for 5 minutes.
- Cover meat in flour and add to the saucepan.
- Add stock, tomato purée, worcester sauce, potatoes, peas, bay leaves, thyme and carrots. Cover with lid and reduce to low heat.
- Cook for 2 hours or until meat is tender. Serve and enjoy!
