Ingredients: 
  • 500g Hazeldenes chicken mince⁠
  • 1 carrot medium, finely grated ⁠
  • 1 zucchini, finely grated ⁠
  • 1 egg⁠
  • 1 cup tasty cheese ⁠
  • ½ cup parmesan ⁠
  • ¾ cup panko breadcrumbs ⁠
  • 1 tbsp finely chopped parsley ⁠
  • 1 garlic clove, minced
  • 1 tsp salt ⁠
  • ½ tsp freshly cracked pepper⁠
Method: 

1. Combine all the rissole ingredients in a bowl.⁠

2. Wet your hands to prevent the mixture from sticking, then scoop out a heaped tablespoon of the mixture and shape it into a patty.⁠

3. Heat 1 tablespoon of oil in a large non-stick pan over medium-high heat. Cook 5–6 rissoles at a time for 3–4 minutes on each side, until golden brown.⁠

4. Serve with your favourite condiment—tomato chutney works perfectly!⁠
