Chicken Rissoles

Ingredients:
- 500g Hazeldenes chicken mince
- 1 carrot medium, finely grated
- 1 zucchini, finely grated
- 1 egg
- 1 cup tasty cheese
- ½ cup parmesan
- ¾ cup panko breadcrumbs
- 1 tbsp finely chopped parsley
- 1 garlic clove, minced
- 1 tsp salt
- ½ tsp freshly cracked pepper
Method:
1. Combine all the rissole ingredients in a bowl.
2. Wet your hands to prevent the mixture from sticking, then scoop out a heaped tablespoon of the mixture and shape it into a patty.
3. Heat 1 tablespoon of oil in a large non-stick pan over medium-high heat. Cook 5–6 rissoles at a time for 3–4 minutes on each side, until golden brown.
4. Serve with your favourite condiment—tomato chutney works perfectly!
