Gluten Free Lamb Rogan Josh
Serves 4 | Preparation Time: 10 mins | Cooking Time: 40 mins
600g pack of Tasman's Gluten Free Lamb Rogan Josh (Casserole)
1 brown onion, finely chopped
2 garlic cloves, crushed
425g can of crushed tomatoes
1/2 cup low-fat yoghurt
1/2 cup mint leaves, shredded
2 cups cooked Gluten Free Basmati Rice, to serve
Olive oil cooking spray
- Spray the saucepan with oil and heat over medium-high heat
- Add one-third of the lamb to the saucepan.
- Cook for 2-3 minutes or until browned. Remove. Repeat twice with the remaining lamb.
- Add the onion and garlic to the saucepan. Cook for 4 minutes or until soft. Add the lamb and tomatoes and cover.
- Reduce heat to low, and simmer for 15 minutes or until the lamb is tender.
- Stir in the yoghurt and mint. Remove from heat.
- Serve with rice.
