Hickory peppercorn beef weber roast

1.5kg Tasman Hickory peppercorn beef weber roast
1 red onion, chopped
3 garlic cloves, smashed
2 rosemary sprigs
2 thyme sprigs
- Preheat the oven to 230°C.
- Set roast on a rack within a roasting pan. Place rack over onion, garlic, and fresh herbs for additional flavour.
- Transfer beef in pan to the oven and roast for 15 minutes, then reduce the temperature to 160°C, and cook an additional 45 to 55 minutes, or until internal temperature of 50°C to 55°C
- Remove roast from the oven, allow to rest for 15 minutes, then slice into thick slices, against the grain.
