Hickory peppercorn beef weber roast

1.5kg Tasman Hickory peppercorn beef weber roast
1 red onion, chopped
3 garlic cloves, smashed
2 rosemary sprigs
2 thyme sprigs


  1. Preheat the oven to 230°C.
  2. Set roast on a rack within a roasting pan.  Place rack over onion, garlic, and fresh herbs for additional flavour.
  3. Transfer beef in pan to the oven and roast for 15 minutes, then reduce the temperature to 160°C, and cook an additional 45 to 55 minutes, or until internal temperature of 50°C to 55°C
  4. Remove roast from the oven, allow to rest for 15 minutes, then slice into thick slices, against the grain.
