Lamb Loin Chops with Ratatouille and Feta


Serves: 4


8-12 lamb loin chops
1 tbsp Olivital extra virgin olive oil

salt and pepper
2 punnets cherry tomatoes
1/2 red capsicum
1/2 green capsicum
2 shallots, diced
1 tbsp minced garlic
1 tbsp oregano
1 tbsp tomato paste
1/2 glass red wine
100g feta cheese, crumbled


Season lamb with salt and pepper and sear in hot pan on both sides for 5-6 minutes turning once.
Sautee shallots, capsicums and garlic for 1 minute then add tomatoes and cook for 2-3 minutes. Next add tomato paste and wine and cook for a further 2 minutes.
To serve, arrange ratatouille onto plates, place lamb on top and crumble feta over lamb.
