Slow Cooked Lamb & Feta Pizza

Slow cooker time: 4hrs on high 8hrs on low
Oven cook time: 25mins
leg of lamb (make sure it will fit in your slow cooker)
4 onions, chopped
salt and pepper
4 large pizza pases
8 tbsp pizza sauce
1 punnet cherry tomatoes, halved
180g feta, crumbled
4 cups tasty cheese or mozzarella, grated
4 cups cooked pumpkin, cubed
4 handfuls baby spinach leaves
greek yoghurt to serve
Spray inside of slow cooker with cooking spray and line the bottom with the onion. Place lamb on top, season with salt and pepper, cover and cook on high for 4 hours and low for 8 hours. Shred lamb once cooked and mix in with the onion.
Preheat oven to 200˚C. Spray 4 oven trays with cooking spray and place a pizza base on each. Spread 2 tbsp of pizza sauce on each base.
Spread the cherry tomatoes, pumpkin, lamb mix, feta and cheese evenly out over the pizza bases (in that order).
Place in oven and cook for 20 minutes or until cheese and crust start to brown.
Take out and add a handful of spinach leaves on each and place back in oven for 5 minutes.
Slice into pieces and serve with greek yoghurt.
