Back to Basics... Tips for Cooking Lamb Cutlets & Chops
- Brush lamb lightly with oil and season well with sea salt flakes and ground pepper.
Preheat the chargrill plate or barbecue to hot. Lamb should sizzle as it makes contact with the heat.
To pan-fry, preheat pan to moderately hot. Keep the heat moderately high.
Cook lamb on one side until moisture appears on the top.
Turn with tongs and cook until done to your liking. Turn lamb once only.
Test for doneness with tongs. Rare is soft when pressed, medium is springy and well done is firm.
Allow lamb to rest. Cover lamb loosely with foil and rest it for 2-3 minutes before serving.
