Loaded Sausage & Cheese Baked Potatoes

• 1 pack Tasman Gourmet Sausages (we used Beef Pepper & Worcestershire but this recipe works well with any variety!)
• 6 medium potatoes
• 6 tbsp butter
• Salt and pepper (to taste)
• 1/2 cup tasty cheese
• 1/2 cup Parmesan cheese
• Caramelised onion
• 300g peas
• 900ml gravy (your choice)
Step 1: Bake the Potatoes
1. Preheat your air fryer to 200°C.
2. Give the potatoes a good wash and pat them dry.
3. Prick each potato a few times with a sharp knife to help them cook evenly.
4. Rub the potatoes in olive oil and sprinkle with salt for the perfect crispy skin.
5. Wrap each potato in foil and pop them into the air fryer for 35–45 minutes.
6. Once they're tender, remove the foil and air fry for an extra 10 minutes to get that golden, crispy finish.
Step 2: Cook the Sausages and Peas
1. Heat up a frying pan and cook your Tasman Gourmet Sausages until they’re browned and cooked through.
2. For the peas, either boil or blanch them in a pot of water for 1–2 minutes until bright green and tender.
Step 3: Assemble the Loaded Potatoes
1. Once the potatoes are done, cut a cross on the top of each one and gently press the sides to open them up.
2. Season the fluffy insides with a pinch of salt and pepper. Add a generous knob of butter, tasty cheese, and parmesan. Mash it all together right inside the skin for creamy goodness.
3. Top each potato with sliced sausages, a spoonful of caramelised onion, and a scattering of peas.
4. Finish it off by drenching it with warm, rich gravy. Enjoy!
