Chicken rice paper rolls

Ingredients: 
  • 2 x Hazeldenes fresh chicken breast fillets (skin off) – poached & shredded 
  • 1 carrot finely shredded 
  • 1 x cucumber finely shredded 
  • Lettuce (we used butter lettuce)
  • 3 tbsp mayo 
  • 3/4 cup hoisin 
  • Sesame seeds 
  • 3 spring onions finely chopped 
  • Rice paper 

Dipping sauce:

  • 2 tbsp mayo 
  • 2 tbsp hoisin 
  • 1 tbsp siracha 
Method: 

1. Place the shredded chicken breast into a medium bowl and add in the mayo and hoisin and mix well.

2. Grab a dish with a lip and add water (make sure its large enough to add the rice paper).

3. Place the rice paper into the water (don’t soak it) ensuring water has covered both front and back of the rice paper. 

4. Place the rice paper onto the bench, and repeat until you have 4. Place each one down so that they are overlapping. 

5. Place the lettuce leaves on top of rice paper, followed by the shredded chicken, carrot, cucumber, sesame seeds and spring onion.

6. Roll up the rice paper roll, ensuring the ends are tucked in and roll up nice and tight.

7. Make the dipping sauce by adding all the dipping sauce ingredients and mixing to combine. Enjoy!
