Easy Chicken Ramen

Ingredients:
- 3 x Hazeldenes fresh chicken breast (skin off)- poached & shredded
- 1 tbsp olive oil
- 1 tsp sesame oil
- 2 tbsp unsalted butter
- 4 cloves minced garlic
- 2 tsp minced ginger
- 1.4 litres chicken stock
- 2 tbsp light soy sauce
- 2 tbsp dark soy sauce
- 1 tbsp sriracha hot sauce- or more if you like it hot
- 1 tbsp Chinese rice wine
- 1 tbsp light brown sugar
- ¼ tsp white pepper
- Packet of egg noodles
Toppings:
- 5 spring onions
- 4 hard boiled eggs- sliced in half
- 1 carrot- peeled and cut into thinly sliced strips
- 1 tsp sesame seeds
- 2 tsp chilli oil
Method:
- Poach your chicken breasts.
- In a large saucepan over medium heat, melt the olive oil and butter together.
- Add minced garlic and ginger and stir for 1 minute, ensuring the garlic doesn't burn.
- Mix in the stock, light and dark soy sauce, sriracha, rice wine, brown sugar, sesame oil and white pepper.
- Cook your egg noodles according to packet.
- Place the noodles, chicken and carrot into a large bowl.
- Ladle over the broth.
- Top each bowl with spring onions and two pieces of egg.
- Finish off with a sprinkle of sesame seeds and a light drizzle of chili oil before serving.
