Easy Chicken Ramen

Easy Chicken Ramen

Ingredients: 
  • 3 x Hazeldenes fresh chicken breast (skin off)- poached & shredded
  • 1 tbsp olive oil
  • 1 tsp sesame oil
  • 2 tbsp unsalted butter
  • 4 cloves minced garlic
  • 2 tsp minced ginger
  • 1.4 litres chicken stock
  • 2 tbsp light soy sauce
  • 2 tbsp dark soy sauce
  • 1 tbsp sriracha hot sauce- or more if you like it hot
  • 1 tbsp Chinese rice wine
  • 1 tbsp light brown sugar
  • ¼ tsp white pepper
  • Packet of egg noodles

Toppings:

  • 5 spring onions
  • 4 hard boiled eggs- sliced in half
  • 1 carrot- peeled and cut into thinly sliced strips
  • 1 tsp sesame seeds
  • 2 tsp chilli oil
Method: 
  1. Poach your chicken breasts.
  2. In a large saucepan over medium heat, melt the olive oil and butter together.
  3. Add minced garlic and ginger and stir for 1 minute, ensuring the garlic doesn't burn.
  4. Mix in the stock, light and dark soy sauce, sriracha, rice wine, brown sugar, sesame oil and white pepper.
  5. Cook your egg noodles according to packet.
  6. Place the noodles, chicken and carrot into a large bowl.
  7. Ladle over the broth.
  8. Top each bowl with spring onions and two pieces of egg.
  9. Finish off with a sprinkle of sesame seeds and a light drizzle of chili oil before serving.
