Oven Baked Pork Cutlets

- 4 x Tasman Butchers Pork Cutlets
- 800g potatoes
- Olive oil
- Salt & Pepper
Rub:
- 1tsp Worcestershire sauce
- 2 tbsp tomato sauce
- 1 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp olive oil
- 1 garlic clove
- 2 tsp apple cider vinegar
1. Preheat the oven to 220°C.
2. Arrange the potatoes on a large baking tray, drizzle with oil, and season with salt and pepper. Toss to coat evenly.
3. Roast the potatoes in the oven for 15-20 minutes.
4. While the potatoes are baking, combine the rub ingredients on a large plate (big enough to fit the pork cutlets).
5. Coat the pork cutlets thoroughly in the rub, reserving any leftover marinade for basting.
6. Remove the potatoes from the oven, toss them, and push them to the edges of the tray.
7. Place the pork cutlets in the centre of the tray and bake for 15 minutes.
8. Take the tray out of the oven and switch the oven settings to grill.
9. Flip the pork cutlets, baste with the reserved rub, and return to the oven for 7-10 minutes, or until beautifully caramelised.
10. Remove from the oven, serve with the pan juices, and garnish with a sprinkle of parsley. Enjoy!
